Ingredients
• Tagliatelle 180 g
• Arrabiata sauce 400 g
• Olive Oil 1 tbsp
• Onion (chopped) 2 tbsp
• Thai Chilli (sliced) 2
• Coriander (chopped) 1 tbsp
• Sugar 1 tsp
• Salt
• Eggs 3
• Feta Cheese for serving
• Parsley for serving
How to cook
1. In a pot of salted boiling water, cook pasta about two minutes shy of al dente.
2. For the sauce: stir-fry onions and chili with olive oil. Add the arrabiesta sauce, Adjust seasoning with sugar and salt.
3. Add the coriander and pasta, toss to combine.
4. Crack eggs over the pasta, close the lid. Reduce the fire, cook the eggs to your desired doneness.
5. Open the lid. Sprinkle with feta cheese and parsley then serve.
