Preparation (Serves 2)
1. To make the chicken sauce, stir fry half of butter and
half of onion. Add chicken and tomatoes. Add half of chicken
stock and half of salt and pepper. Cook until chicken is done,
transfer to a plate.
2. To make cream of mushroom, stir fry remaining onion and
butter. Add mushrooms, cream and remaining chicken stock,
bring to a boil until thickened. Add remaining salt and pepper.
Remove from stove.
3. Boil lasagna until tender. Don’t overcook. Cut lasagna sheets
into half, place 1 sheet on an oven proof baking pan.
Put chicken sauce and mushroom sauce on the sheet, layer
with the second sheet. Repeat the step. The top layer
should have only mushroom sauce, then sprinkle cheese on top.
Bake until cheese melted and turned brown. Serve hot.
